Program Overview

The Bachelor of Science program in applied nutrition and health introduces students to nutrition principles, along with essential skills in communication, leadership and community engagement, to develop and apply innovative solutions to health concerns across populations.

Coursework explores the fundamentals of nutrition, such as macro- and micronutrients and developing nutrition care plans. Students develop a deep understanding of more specialized topics such as cultural aspects of food and health, food and health policy, food safety and food sustainability. This curriculum prepares graduates to apply their nutrition expertise to a variety of careers. Students also engage in experiential learning with community partners specializing in food and nutrition to gain practical experience, develop professional relationships and establish a foundation for their future goals.

Students select from one of three focus areas that align with their interests and professional goals: community nutrition, food service operations, or pre-dietetics. In community nutrition, students delve into strategies for promoting health and wellness within communities. Through evidence-based social media efforts, students address critical public health issues. Food service operations courses teach principles of management, strategy, supply chain management and entrepreneurship in food and nutrition. For students interested in becoming registered dietitians, the pre-dietetics focus offers the additional science and leadership courses required for dietetics-focused graduate programs.
