The Didactic Program in Nutrition and Dietetics (DPD) is designed to prepare students for supervised practice leading to eligibility for the Commission on Dietetic Registration (CDR) credentialing exam to become Registered Dietitian Nutritionists (RDN). The DPD is accredited by the Accreditation Council for Education in Nutrition and Dietetics of the Academy of Nutrition and Dietetics (ACEND). This major fulfills the A and L areas of the REAL Curriculum. The coursework requires students to analyze many influences (culture, behaviors, health status and social and physical environments) on diet and health. Through application and shadowing experiences, students will develop a professional identity and reflect on their role within the field of Nutrition and Dietetics. Students will be required to take Math and Science courses, these courses will fulfill the REAL studies R minor. Student will need to select a minor to fulfill the E area to complete the REAL Curriculum requirements.

Optional Practical Training or OPT is a period during which students, who have completed their degrees in the USA, are permitted to work for one year on a student visa by the United States Citizenship and Immigration Services (USCIS). OPT allows students to work for up to 3 years and develop real-world skills to survive in the competitive jobs market.
It is temporary employment for a period of 12-months that is directly related to the major area of study of an F-1 student. Eligible students have the option to apply for OPT employment authorization before completing their academic studies and/or after completing their academic studies.
A student can participate in three types of Optional Practical Training (OPT):
